Sodium benzoate is a white granule or crystal powder, odorless or slightly benzoic odor, slightly sweet taste, astringent flavor. It is also known as sodium benzoate, relative molecular mass 144.12. It is stable in air, easily soluble in water, the pH value of its aqueous solution is 8, soluble in ethanol. Benzoic acid and its salts are broad-spectrum anti-microbial reagents, but its antimicrobial effectiveness depends on the pH value of the food. As the acidity of the medium increases, its bactericidal and bacteriostatic effectiveness increases, and it loses its bactericidal and bacteriostatic effects in alkaline medium. The optimal pH value for antiseptic is 2.5~4.0.
